*preparation time: 15mins
*cooking time: 30mins
*makes 20 small bars
95g light brown sugar
1/2 tsp salt
1/4 tsp cinnamon
320g made up of almonds, dried apricots, raisins, sesame seeds, pumpkin seeds, linseed, chocolate chips…really whatever you like
60g your choice of nut butter
6 tbsps/90ml melted butter/coconut oil
Preheat the oven to 170degrees C. Grease a square baking tin, line with baking parchment and grease the paper lightly.
Mix all of the dry ingredients together in a bowl. Whisk together the wet ingredients. Combine the wet and dry ingredients and press the mixture firmly into the tin, make sure it is evenly packed.
Bake for about 30mins – watch carefully so it doesn’t get too brown.
Allow to cool in the tin for at least 20mins (this allows them to firm up). Remove from the tin, but keep them on the parchment. Allow to cool fully before cutting into bars.
